Vegan Italian Pasta Salad
A vegan dish with a taste of Italy

Today we will be cooking Vegan Italian Pasta Salad
Ingredients
• • 3 ounces whole wheat macaroni or pasta shape
• 1 scallion
• 4 olives
• 1/2 small red pepper
• 1 slice whole wheat bread
• 1/4 cup smoked tofu
• 11/2 tablespoons olive oil
• 1 teaspoon cider vinegar
• Pinch garlic salt
• Pinch Oregano
• Black Pepper
Directions
1. Cook the pasta until tender. Drain, cool, then chill.
2. Mince the scallion and olives. Chop the red pepper. Toast the bread, then dice it.
3. In a cup mix the oil, vinegar, garlic salt, oregano and pepper to taste. Pour the dressing over the salad and mix it all thoroughly. (hint: if you love olives like I do, pour a little of the olive juice in your dressing.) Recommend this page to a friend
